Chicken and Bean Creole
 
1 Tbsp  vegetable oil
1 cup  chopped, uncooked chicken (1/2 lb.)
1/2 cup  chopped green pepper
1/2 cup  chopped onion
1/3 cup  chopped celery
1 small  minced garlic clove
1   16 oz.) can pork and beans
1   8 oz.) can tomato sauce
1/4 tsp  dried oregano
1/4 tsp  hot pepper sauce
3 cup  hot, cooked rice
 
cook chicken, onions, peppers, celery and garlic in large skillet over 
medium high heat, 3-4 minutes or until chicken is lightly browned and 
vegetables are tender. add remaining ingredients, except rice. bring to a 
full boil, reduce heat to low, simmer uncovered, about 10 minutes. serve 
over hot cooked rice. makes 4 (1 1/2 cup) servings.
