Lemon Cheese
 
4 oz.  butter
1 lb.  sugar
  juice of 3 lemons
  grated rind of 3 lemons
5   eggs
 
mix the butter and sugar in saucepan; then add lemon rind and juice. whip 
eggs and add to other ingredients. heat gently and stir for about 15 
minutes, taking care that it doesn't burn; or, preferably, cook 30 minutes 
in a double boiler. when the mixture has thickened, pour into jars and 
cover tightly. makes about 3 cups. this is especially good on toast or 
english muffins for breakfast or with hot tea as a bedtime snack. it is 
also delicious as filling between 2 white cake layers.
