Nita's Crockpot Swiss Steak
 
1 to 1-1/4 lb.  boneless beef round steak [cubed is fine]
1/2 tsp  table salt
1/8 to 1/4 tsp  black pepper
  about 3 tablespoons bacon drippings or cooking oil [not olive oil]
4 or 5 Tbsp  flour [self-rising is ok}, seasoned with 1/2 teaspoon
  table salt, bit of black pepper and 1/4 teaspoon paprika [optional]
  about 8 small red new potatoes, washed with a brush, skins still on and
  cut
  into halves
1-1/2 cup  baby carrots, trimmed, washed
1 medium  vidalia or sweet type onion, peeled, sliced
1 can  diced tomatoes with basil, garlic and oregano, [with juices --
  undrained (14 1/2 ounces)
  or,
1 can  diced tomatoes with added herbs, plus 1 clove garlic, crushed,
  peeled,
  minced
1 package  knorr or mccormick brown gravy mix
  or,
1   jar beef gravy (12 ounces)
2 or 3 Tbsp  dark brown sugar, packed firm
  chopped fresh parsley or herbs [optional]
 
trim beef and cut into serving pieces. season with salt and black pepper. 
season flour with salt, black pepper, paprika. coat steak with flour on 
both sides and lay aside. heat a large skillet. add bacon drippings or 
oil. heat. coat beef again quickly with flour. shake off excess [loose 
flour]. brown steak quickly on both sides over medium-high heat. turn 
crockpot on high. place steak in bottom of crockpot. add 1/2 cup water, 
potatoes, carrots and onion. nita's note: i sometimes like to add my 
vegetables only during the last 2 hours of cooking. in a saucepan, heat 
tomatoes. in a small container, add gravy mix to a bit of the juice from 
the tomatoes. stir to combine well. mix with the tomatoes in the saucepan, 
stirring well -- add 2 tablespoons dark brown sugar. pour tomato-gravy 
mixture over the steak and vegetables. cover crockpot tightly. reduce heat 
to low and cook for 6 to 8 hours or until tender. add a bit of water -- 
but only if needed. when ready to serve, sprinkle with parsley if desired 
or a few more herbs.
