Pasta with Prawns and Lemon

  375g pasta (your choice), i prefer linguine
2 Tbsp  extra virgin olive oil
  1kg large green prawns (peeled and halved lengthways)
2 clove  crushed garlic
1-1/2 cup  frozen peas
2 tsp  lemon rind (finely grated)
6   shallots (green onions) sliced thinly
1/3 cup  fresh flat leaf parsley (coarsely chopped)
2 Tbsp  lemon juice
  additional 60ml extra virgin olive oil
  salt
  black pepper (freshly ground)
 
serves 4 
preparation time 20 mins 
cooking time 15 mins 
 
add salt, a teaspoon of oil then pasta to boiling water. cook until just 
tender. drain well. 
meanwhile, heat oil in a large frying pan. cook prawns and garlic until 
prawns have just changed colour. remove from pan and cover to keep warm. 
you may have to cook prawns in batches depending on the size of your 
frying pan. 
add peas to the same pan; cook, stirring, until heated through. add lemon 
rind, shallots and parsley; cook, stirring until peas are tender. return 
prawns to the pan. add juice and stir until hot. 
combine prawn mixture with hot pasta and extra olive oil. toss well and 
season with black pepper. 
as an alternative, try the prawn mixture served with leafy greens 
(miniature lettuce varieties or baby rocket) for an entree or side dish 
with a fish main course. to do this, reserve the lemon juice and add it 
to the extra olive oil to make a dressing. drizzle over prawn mix before 
serving.
