Corn Relish
 
this recipe has been scaled to yield 8 servings. 
original recipe makes 32 servings. 
 
1/2 cup  whole kernel corn
1 Tbsp  chopped green bell peppers
1/8   onion, thinly sliced
1 Tbsp  and 1-1/2 teaspoons sweet pickle relish
1/8 tsp  celery seed
1/8 tsp  salt
1/8 tsp  dry mustard
1-1/2 tsp  distilled white vinegar
1-1/2 tsp  white corn syrup
 
in a medium saucepan, mix together the corn, green bell peppers, onion, 
sweet pickle relish, celery seed, salt, dry mustard, vinegar and corn syrup. 
bring to a boil, reduce heat and simmer 5 minutes. 
transfer the mixture to sterile jars and refrigerate until serving. 
 
makes 8 servings
