Spinach Bisque
 
1/2 cup  chopped onions
2 Tbsp  light margarine
1/3 cup  flour
1/2 tsp  salt
1/8 tsp  nutmeg
2-1/2 cup  skim milk
1 cup  fat-free chicken broth
2 oz.  velveeta light -- cubed
1 package  frozen chopped spinach -- thawed and drained
 
in a 3-qt. saucepan, saute onion in margarine until tender. stir in the 
flour and seasonings until smooth. gradually whisk in the milk and chicken 
broth. stir constantly over low heat until it thickens a bit. 
add cheese; cook and stir over low heat until melted. 
add spinach; cover and simmer for 4 - 5 minutes or until heated through. 
 
serves: 4
