Armenian Garbonzo Kufte

(fried chickpea cakes) 
 
1 cup  prepared mashed potatoes
2   egg yolks
1 lb.  garbanzo beans soaked in water overnight
1/2 cup  fine diced onions
1/4 cup  minced parsley
  salt and pepper
  oil to fry
 
cook beans for one hour or soft and rinse through sieve to remove skins. 
mix in remainders very well with hands and form into small walnut size 
balls. fry in hot oil. 
note: canned chickpeas may also be used.
