Dilly Salmon Fillets
 
4   6ounce fresh skinless salmon fillets, 1/2 to 3/4 inch thick
3 Tbsp  lemon juice
2 Tbsp  snipped fresh dill
2 Tbsp  mayonnaise or salad dressing
2 tsp  dijon-style mustard
dash  freshly ground black pepper
 
rinse fish; pat dry and place in a shallow dish. in a small bowl 
combine the lemon juice and 1 tablespoon of the dill; pour over fish 
and marinate at room temperature for 10 minutes. meanwhile, in a small 
bowl stir together the remaining dill, the mayonnaise, mustard, and 
pepper; 
set aside. in a grill with a cover arrange preheated coals around drip 
pan. 
test for medium heat above pan. place the fish on the lightly greased 
grill 
rack over the drip pan. cover and grill for 3 minutes. turn fish; 
spread the mayonnaise mixture atop the fish. cover and grill 2 to 6 
minutes 
more or until fish flakes easily when tested with a fork. makes 4 
servings.
