Mardi Gras Jambalaya Mix

this recipe makes enough spicy starter to share with four families, so 
spreading the fat tuesday taste is a cinch! make festive packages by 
painting wooden boxes with glowing hues and topping them off with 
colorful mardi gras beads. 
 
1/2 cup  sweet pepper flakes
1/4 cup  dried minced onions
1/4 cup  parsley flakes
1/4 cup  beef bouillon granules
3 Tbsp  dried minced garlic
1 to 2 Tbsp  ground black pepper
2 Tbsp  paprika
1 Tbsp  dried oregano leaves
2 tsp  salt
1 to 2 tsp  crushed red pepper flakes
1/4 to 1/2 tsp  ground red pepper
1/2 tsp  ground cumin
4 cup  uncooked white rice, divided
4   bay leaves, divided
 
in a medium bowl, combine pepper flakes, onions, parsley, bouillon 
granules, garlic, black pepper, paprika, oregano, salt, red pepper 
flakes, red pepper, and cumin. place 1 cup rice and 1 bay leaf in each 
of 4 resealable plastic bags. divide spice mixture evenly into bags. 
seal bags and give each bag with recipe for jambalaya. yield: about 1 
1/2 cups mix. 
 
 
 
 
jambalaya 
 
3 cup  water
16 oz.  smoked sausage, sliced
1 can  (14 1/2 ounces) diced tomatoes, undrained
1   bag jambalaya mix
 
in a dutch oven, bring water, sausage, tomatoes, and jambalaya mix to 
a boil over medium heat, stirring occasionally. reduce heat to low. 
stirring occasionally, cover and simmer 23 to 28 minutes or until most 
of liquid is absorbed and rice is tender. remove bay leaf to serve. 
serve warm. yield: about 7 cups jambalaya. 
 
 
 
mardi gras box 
 
you will need an oval shaker box (we used a 4 1/2" x 6"" oval box); 
black spray paint; gold, purple, and green acrylic paint; paintbrushes; 
liquitex painters pearl medium; gold fine-point paint pen; clear spray 
sealer; hot glue gun; one strand each of gold, purple, and green beads; 
hole punch; 1 1/2" x 2 5/8"" piece of black card stock; and 6"" of gold 
cord. 
note: allow paint, pearl medium, paint pen, and sealer to dry after each 
application.remove lid from box. spray paint box and lid black. paint 3/4" 
wide gold 
stripes and 1" wide green and purple stripes around sides of box. mix 
one part water with one part pearl medium; apply mixture over stripes. 
use paint pen to write "mardi gras" on side of lid. apply two to three 
coats of sealer to box and lid. replace lid. 
arrange beads on top of lid; spot glue to secure. 
for tag, punch hole in card stock. use paint pen to write message on 
tag. use cord to attach tag to beads.
