Danish Aebleskiver

aebleskiver (danish pancakes) |

2 cup | milk |
3 | eggs, separated |
2 cup | flour |
1 tsp | salt |
4 tsp | baking powder |
1 Tbsp | sugar |
| vegetable oil |

combine milk and egg yolks. sift together dry ingredients and add to |
milk and egg mixture. beat egg whites until stiff. fold in. |
heat aebleskiver pan. put about 1 |
teaspoon of vegetable oil in each cup of the pan. put enough batter in |
each cup to almost fill it. use metal knitting needle to turn |
aebleskivers. keep turning them until golden brown. add additional |
shortening for each frying. |

serve with syrup, jams or jellies. makes about 3 dozen aebleskivers. |
