Vietnamese Green Papaya Salad

| salad |
4 cup | shredded green papaya or jicama to substitute |
1 cup | beef jerky (yes, you're reading that right beef jerky, do not use |
| the slim jim brand for this), |
| chopped into bite-size strips 1/2 cup crushed peanuts |
1/2 cup | chopped cilantro |
| juice of 1 lime |
|
dressing |
all ingredients to taste |
nuoc nam, vietnamese anchovy sauce |
rice vinegar |
chili sauce |
sugar |
water |
|
mix all of the ingredients for the dressing, according to your taste. |
don't be thrown off by the anchovy sauce; it imparts a wonderful flavor. |
spoon out dressing on the bottom of the plate. on it, layer the papaya, |
beef jerky, peanuts, cilantro and splash the top of the salad with lime |
juice. |
