Tomato Jam
 
1 lb.  tomatoes
1 lb.  sugar
2 oz.  ginger root
1   cinnamon stick
  zest of one lemon
 
 
peel, core and slice tomatoes. cover with sugar and let stand for 12 
hours. strain. boil juice until syrup falls from a spoon in heavy 
drops. add the tomatoes, spices and zest. cook until jam thickens then 
put in hot, sterile jars. process for 10 minutes in hot water bath 
before sealing.
