Tomato Jam

1 lb. | tomatoes |
1 lb. | sugar |
2 oz. | ginger root |
1 | cinnamon stick |
| zest of one lemon |

|
peel, core and slice tomatoes. cover with sugar and let stand for 12 |
hours. strain. boil juice until syrup falls from a spoon in heavy |
drops. add the tomatoes, spices and zest. cook until jam thickens then |
put in hot, sterile jars. process for 10 minutes in hot water bath |
before sealing. |
