Potato Salad

4 | good sized potatoes, peeled and cut into 1" cubes, boiled and drained |
3 | hardboiled eggs |
1 large | onion, diced fine |
1 large | rib celery, diced fine |
1/4 cup | sweet pickle relish |
| salt and white pepper, to taste |
|
| in a small bowl, mix together |
1 cup | mayonnaise |
1/4 cup | deli-style mustard |
1 tsp | sugar |
1 tsp | vinegar. |
|
mix together well, set aside. |
in large bowl, place well drained cubed potatoes, shredded eggs and |
remaining salad ingredients. cover and refrigerate until nice and cold. |
cover dressing and refrigerate also. after about 2 hours, remove from |
refrigerator and blen dressing into salad gently so you don't squash the |
potato cubes. cover and refrigerate several hours before serving. make |
day |
before you need it and the flavor is alot better. stir once more before |
serving and sprinkle on a little hungarian paprika. |
