Quick Muffin Mix 
2-1/2 cup  all-purpose flour
2-1/2 cup  whole wheat flour
1 cup  wheat bran cereal
1 cup  quick-cooking oats
1-1/2 cup  sugar
2 Tbsp  baking powder
2 tsp  salt
Combine all ingredients in a large airtight container. Store at room temperature 
until ready to use. Stir well before 
measuring for the muffin recipe. Yield: about 6 cups. 
Blueberry Muffins 
3 cup  Muffin Mix
2 Tbsp  brown sugar
1 tsp  ground cinnamon
1-1/4 cup  fresh or frozen blueberries
1 cup  milk
2   eggs
1/4 cup  applesauce
1 tsp  vanilla extract
In a mixing bowl, combine first three ingredients. Stir in blueberries. In 
another bowl, beat milk, eggs, applesauce and 
vanilla. Stir into blueberry mixture just until moistened. Fill greased or 
paper-lined muffin cups two-thirds full. Bake 
at 425'F for 15-18 minutes or until 
muffins test done. Cool in pan 10 minutes before removing to a wire rack. (Can 
substitute other kinds of berries for 
blueberries and/or add nuts.) Yield: about 1 dozen.

5   eggs

3-1/2 cup  sugar

1 cup  chocolate chips
1 cup  white chocolate -- coarsely chopped
1 cup  macadamia nuts -- coarsely chopped
  mousse topping
3/4 cup  heavy whipping cream
1 cup  chocolate chips
3   eggs
1/3 cup  sugar
1 dash  salt
brownies: melt butter and chocolate over low heat in heavy saucepan. stir 
occasionally. when melted remove from heat and allow to cool slightly. in 
a large mixing bowl beat eggs, vanilla, sugar, and salt at medium speed 
for 10 minutes. blend in chocolate-butter mixture at low speed until 
mixed. don't overbeat. add flour, blend gently until mixed, don't beat. 
stir in chocolate chips, white chocolate, and macadamia nuts. pour batter 
into generously greased 9x13" pan. spread mousse topping over brownie 
mixture. bake at 375f for 40 to 45 minutes. cool overnight, then cut into 
mousse topping: heat whipping cream and chocolate chips in heavy saucepan, 
stirring constantly, until chocolate is melted and mixture is smooth. cool 
slightly. beat remaining ingredients until foamy; stir into chocolate

2/3 cup  all-purpose flour
1/2 tsp  baking powder

melt chocolate with shortening over low heat-a double boiler works better 
for this. mix flour with baking powder and salt. beat eggs well; then 
gradually beat in the sugar. blend in the chocolate mixture and vanilla. 
add flour mixture and blend well, stir in nuts. spread in a greased 8-inch 
square pan. bake 350 for 25 minutes (for moist, chewy brownies); or about 
30 minutes or until tester comes out clean when inserted in the center of 
the brownies (this will be cake like brownies). cool in the pan, then cut 
into squares. 
notes : recipe may be doubled, bake in a greased 9x13" pan at 350 
for 25-30 minutes.

comes out clean (brownies may appear moist). cool on wire rack. in 
saucepan, melt butter. add sugar and milk. bring to a boil. boil for 30 
seconds. remove from the heat. stir in the chips until melted. beat until 
frosting reaches spreading consistency. frost cooled brownies. cut.

12 oz.  unsweetened chocolate
1-1/8 cup  white bread flour
10 Tbsp  unsalted butter
3 large  eggs
1   vanilla bean
1/2 tsp  salt
preheat oven to 350 f. thoroughly grease a 9" * 9" square pan and set in 
the refrigerator. break the chocolate into small pieces, melt carefully in 
a double boiler. remove from heat, and set aside to cool. slit the 
vanilla bean lengthwise with a knife and scrape the insides into a large 
bowl along with the sugar and the salt. mix well, breaking up lumps in the 
sugar. cut the butter into small squares. mix it in to the sugar (a wooden 
spoon works great for this) until thoroughly blended, minimizing air 
addition (i.e. do not cream). stir in the chocolate and mix until fully 
blended. add the eggs, one by one, stirring each until it is fully 
incorporated before adding the next. blend in the flour slowly - this will 
take some effort. the mix should have the consistency of firm cookie 
dough. spread the mixture into the pan and smooth with a knife. bake at 
350 f for 30 minutes. cool completely and cut into squares as large as 
you want when you are ready to serve.

beating well after each addition. gradually blend in flour mixture. stir 
in white chocolate chips, milk chocolate chips and nuts. spread batter in 
greased 8" square pan and bake for 30-35 minutes. cut into 2" bars.
