Fresh Mint Relish
 
1-1/2 cup  tightly packed fresh mint leaves
1   california green chile, seeded and minced
1 Tbsp  minced onion
2 Tbsp  water
1 Tbsp  lemon juice
3/4 tsp  sugar
1/2 tsp  peeled, grated gingerroot
1/4 tsp  salt
 
using the steel blade in a food processor bowl; add all ingredients, 
and process 30 seconds or until finely chopped. transfer to a small 
bowl. cover and chill 1 hour. 
 
yield: 1/2 cup plus 1 tablespoon
