cracklin cornbread
 
3 Tbsp  lard
1 cup  self rising cornmeal
1 cup  self rising flour
1 Tbsp  sugar
2 large  eggs
1-1/2 cup  buttermilk, or sweet milk
1/2 cup  cracklins
 
put 1 tbsp. lard in a 6 x 12 inch loaf pan or cast iron skillet and get it 
hot (be sure to grease the sides). 
mix 1 tbsp. melted lard with all other ingredients well. 
pour the batter into the hot pan or skillet, spread 1 tbsp. melted lard 
across top and bake in 425f oven for 20 to 25 minutes. 
crackling is the crisp remains of rendered lard, salt pork or crispy skin 
after cooking.
