yellow rice and chicken arroz con pollo
 
1 package  vigo yellow rice
1 oz.  mazola oil
4 cup  water
1 can  english peas
1 can  whole kernel corn
6 - 8 piece  chicken
 
in a 5 quart heavy saucepan with tight fitting lid, saute 6-8 pieces of 
chicken for approximately 15 minutes, turning frequently. add water and 
bring to a boil. add yellow rice and let boil for 1 minute. add peas and 
corn and cover tightly, reduce heat to simmer and cook undisturbed for 
20-25 minutes.
