4 medium unpeeled baking potatoes, cut into l l/2 inch pieces (about 2 
pounds) 
l/3 cup skim milk 
l/4 cup plain nonfat yogurt 
2 tablespoons reduced-calories margarine 
l/4 teaspoon salt 
l/8 teaspoon pepper 
 
cook potatoes in boiling water about 30 minutes or until very tender; 
drain. combine potatoes, skim milk, yogurt, margarine, salt and pepper in 
large mixing bowl; beat at medium speed of an electric mixer about l 
minute or until almost smooth.
