Zucchini Casserole
Serves 6 to 8 
 
10 small  Zucchini; Thinly Sliced
1 lb.  Mozzarella Cheese; Grated
1 lb.  Cheddar Cheese; Grated
1 large  can Diced Green Chilies
3/4 cup  Bisquick
1/2 cup  Milk
1 large  Egg
  grated Parmesan Cheese
 
In a large ovenproof casserole dish, layer as follows; zucchini slices, 
Mozzarella cheese, chilies (single layer only), zucchini slices, cheddar 
cheese, zucchini slices, repeat. After layering is completed, mix together 
the Bisquick, milk and egg and pour over top for the layers. 
Sprinkle top with Parmesan cheese to taste. Bake in a preheated 350-F degree 
oven for 1 hour or until lightly browned on top. Remove from oven and cool 
5-minutes prior to serving.
