BLUEFISH with TROPICAL MARINADE

COOKING TIME: 6-8 Minutes |

2 lb. | Bluefish Fillets (about = lb. per serving), rinsed in cold water and |
| patted dry |
4 clove | Garlic, mashed |
2 | mangos, 1 mashed for marinade; 1 cut into slices as a garnish |
2 | lemons, cut into wedges |
1 small | Papaya, mashed |
1 - 2 | chili Peppers (to taste), finely chopped |
3 Tbsp | Lime Juice |
| 1 Tbsp. Fresh Cilantro, chopped |
1 Tbsp | Olive Oil |
|
In a bowl, add garlic, mango, papaya, lime juice, chili peppers, cilantro |
and oil and whisk briskly to blend; marinate Bluefish Fillets in mixture, |
cover and refrigerated (1 hour). Arrange Fillets in a buttered broiling pan; |
broil (6-8 minutes) 4-5" from heat source; baste regularly with marinade. |
Serve hot, garnished with mango slices and wedges of lemon to the side. |
