Dilly Beans
 
4 lb.  green beans
6 Tbsp  salt
3 cup  distilled white vinegar
3 cup  water
1 Tbsp  dill seed or fresh dill
1 Tbsp  mustard seed
18   whole black peppercorns or 1 1/2 tsp. dried hot peppers, seeds removed
  and pepper crushed
 
Wash beans thoroughly and cut in small pieces, or use whole small beans. 
Combine salt, vinegar, and water. Heat to boiling point. Pack beans into 
hot, sterilized jars. Add to each jar 1/2 tsp. dill seed or fresh dill head, 
1/2 tsp. mustard seed and 3 whole pepper corns, or 1/4 tsp. hot red peppers. 
Pour boiling liquid over beans. Seal. Process in boiling water for 20 
minutes. Makes 6-7 pints.
