Smoked Salmon Filling for Turnovers

2 tsp  butter
2 tsp  flour
1/2 cup  heavy cream
1 Tbsp  onion juice
1/4 tsp  cayenne
1/4 cup  dill -- chopped and fresh
1/2 lb.  smoked salmon -- coarsely chopped
1   egg -- lightly beaten
 
Melt butter in a small heavy saucepan. Off the heat, blend in the flour. 
Add the cream and onion juice gradually, stirring constantly. Return to 
the heat and stir until the sauce is quite thick. Remove from heat and 
add the pepper and dill. Fold in the chopped salmon. Let cool for about 
10 minutes. Stir in the egg. Chill the mixture covered for about 2 hours.
