Baked Fried Apple Pies (2) Collection
fried pies with apple or sweet potato filling 
baked fried apple pies 
apple filling 
1   6 oz.) pkg. dried apples
1/4 cup  butter
3/4-1 cup  sugar, to taste
1/2 tsp  cinnamon
1/2 tsp  nutmeg
1 tsp  pure vanilla extract
1 tsp  cornstarch (optional)
pour dried apples into a saucepan and add just enough water to cover. 
bring to a boil, and simmer over medium-low heat for about 10-12 minutes, 
until apples are plump and absorb most of the water. add butter, sugar, 
spices and vanilla and stir. if there's too much liquid, make a paste with 
the cornstarch and a few drops of water, and stir it into the pot to 
thicken. cover and refrigerate overnight. 
sweet potato filling 
1-1/2 lb.  sweet potatoes, peeled and cut into chunks
1/2 cup  butter
1/2 tsp  cinnamon
1/2 tsp  nutmeg
1/2 tsp  ground cloves
1 tsp  pure vanilla extract
3   eggs
1/4 cup  milk
1 tsp  cornstarch (optional)
in a saucepan, cover sweet potato chunks with water and bring to a boil. 
simmer about 20-30 minutes, until potatoes are soft. drain well, then mash 
by hand or with a mixer, blending in the butter or margarine, spices, 
vanilla and eggs, and milk. if it needs thickening, mix cornstarch with a 
few drops of water to make a paste and stir into potato mixture. cover and 
refrigerate overnight. 
fried pie dough 
3 cup  self-rising flour
1-1/2 cup  ice water
3 Tbsp  shortening
cut shortening into flour and add water, a little at a time, mixing dough 
with your hands until it comes together in a wet, sticky mass. you may not 
need all the water. squeeze out any lumps. scoop dough out onto generously 
floured piece of wax paper and knead for 3-4 minutes, adding flour if 
necessary, until dough comes together in a smooth ball. form into a thick 
round disk and, using a floured knife, cut dough into squares. when ready 
to fill, take one section and roll out on floured wax paper into a circle 
about 8 inches in diameter. place about 2 heaping tablespoons of filling 
in center and fold dough over to cover, avoiding tears or cracks. wet 
dough with finger to seal, and use a floured fork to crimp edges, then 
trim off excess dough. in hot oil, deep fry until golden brown. drain on 
paper dowels. serve warm as soon as possible. jean's fried apple pie

1 cup  coca-cola or mountain dew, opened and flat
1   8 oz.) pkg. dried apples
5 cup  water
1-1/3 cup  sugar
1/2 tsp  cinnamon
3 cup  all-purpose flour
1/3 cup  oil
1 tsp  salt
open beverage the night before and refrigerate; let it go flat. bring 
dried fruit, water and sugar to a boil. turn to simmer and cook until 
apples are soft and all of the water has cooked away. add cinnamon and set 
aside. mix flour, oil, salt and beverage together, forming a soft dough. 
roll dough very thin, using a saucer to cut out rounds. fill each with 
cooked fruit and fold it over. with a fork, seal the dough by pressing the 
fork around the edges. fill a stainless steel pan, about 11-by-13 inches, 
with about 1/4 inch of oil (or less, but enough to cover bottom of pan). 
place pies in oil in pan in a single layer. bake at 400-450 degrees for 
about 10-12 minutes. turn pies over in pan and cook about 10 more minutes 
or until golden brown. place pies on paper towels to cool. can store in 
tupperware container with paper towels between the layers. or wrap and 
freeze pies; reheat in microwave or in oven on a low temperature. 
note: it's best to prepare all the pies first and place in oil just before
